The $95 menu changes the selection. Its opening choices include oysters, tuna nigiri and chicken; the mains include a mushroom-based Japanese pancake, surf and turf, and seafood rice. The names alone do not support a claim that Reserve has more courses, larger servings or better ingredients in every dish. What the $30 difference means for two
